Apple Strudel with Cinnamon Custard

Prepare this healthy, flavoursome recipe from Felix Halter of the V-ZUG Gourmet Academy with the V-ZUG Combi-Steam SL oven.

600g Granny Smith apples
50g sultanas
60g hazelnut meal
50g sugar
50g normal butter
50g clarified butter
1 ea juice and zest of lemon
5 filo pastry sheets
icing sugar shaker to finish 

1 tsp cinnamon
500 ml vanilla custard

 

Preparation 

  • Slice apples very thinly and panfry with normal butter in work or frypan until soft.
  • Add the sultanas, sugar, half the hazelnut meal, lemon juice and zest, set aside to cool slightly.
  • Place filo sheet on cutting board and brush with clarified butter, sprinkle one teaspoon of hazelnut meal. Repeat step 3 with all the pastry sheets.
  • Place apples alongside the wider side and roll up with both ends tucked in underneath. Place on baking paper.  Apply final coat of butter on outside.
  • Preheat oven at 200 ˚C and bake for 40 minutes using the "hot air" function. Remove from oven and finish with icing sugar.

Preparation time 20 minutes
Baking time 40 minutes.
